Zeytinyagli Fasulye Pilakisi (White Beans In Olive Oil)


Ingredients:

  1. 400 grams white beans
  2. 3 onions
  3. 5 cloves garlic
  4. 2 medium carrots
  5. Handful od chopped parsley
  6. 200 grams olive oil
  7. salt


1- Soak beans in plenty of water overnight.
2- Drain beans and rinse under cold water. Place in a saucepan of water and boil until soft.
3- In a separate pan, add olive oil, chopped onions and garlic, thinly sliced carrots and saute until onions are soft.
4- Drain beans and rinse under cold water. Place in saucepan with vegetables. Add salt to taste, a small amount of water and chopped parsley. Simmer until cooked. Remove from heat and cool. Serve with lemon wedges.

Note: This dish is served cold.
