Firinda Kuzu Budu Sebzeli (Leg of Lamb with Vegetables)


  1. 1 kg leg of lamb
  2. 2 tomatoes
  3. 4 potatoes
  4. 400 grams peas
  5. 2 carrots
  6. 20 grams tomato paste
  7. 6 green peppers
  8. 2 onions
  9. 4 tablespoons oil
  10. salt and pepper

1- Slice onions and add to large pan of water. Place leg of lamb carefully into water.
2- Allow to boil, add salt and simmer until meat is semi-cooked.
3- Place chopped tomatoes, paste and oil in pan and lightly cook.
4- Place leg of lamb on baking dish and spread tomato mixture over lamb.
5- Arrange blanched potatoes, peas, carrots,onions and sliced green peppers around lamb.
6- Cook in moderate oven until meat is browned. Remove from oven adn allow to stand for 10 minutes. Sprinkle chopped parsley on top before serving.
